Long time, no see
Remember when I mentioned things would be a crazy for a little while? They were crazier than I thought they’d be. After weeks of super late nights, my team and I successfully pulled off an event for over 1,000 people! Bryan flew down to Orlando afterward, and we celebrated the accomplishment with 3 days at Disney. You can view our whole itinerary and a recap of that trip here!
In other exciting news, today marks two full years of marriage to Bryan! Happy Anniversary, B! We decided early on that in lieu of anniversary gifts, we’re going to treat ourselves to a fun trip together each year to celebrate. While we aren’t on a tropical vacation like we were this time last year, we do have our Italy trip to look forward to in August, and our front yard is getting a makeover next weekend after 2 years with zero curb appeal. We’re keeping things low key tonight, since the landscaping will be pricey, and we’ve left Nash alone for the last 3 nights. Cheers to chapter 3!

Since I was working stupid hours over the last few weeks, I had no desire to look at any screens after work — a great thing for my ever-growing reading list!
For those of you interested in the personal finance content that I’ve been slacking on, I think this will scratch that itch. Nick Maggiulli’s book is divided into two sections - 1) Saving and 2) Investing. With a background in accounting, it’s hard for me to say how rudimentary this book is (or is not), but I found it really easy to digest and heavy on the basics/fundamentals. If investing (or saving) is a mystery to you, and these uncertain economic times have you shying away from the stock market, there’s plenty of data in this book that supports the idea that you should “just keep buying.”
In my opinion, this is, hands down, Emily Henry’s best book. I loved Beach Read, and I thought People We Meet on Vacation was cute, but this blew both out of the water. If you love to hate (or love to love) Hallmark movies, you will adore this storyline. It pokes fun at trite romantic tropes, and it had me laughing out loud on an airplane next to strangers. It earned a very solid 5 stars on Goodreads from me, and I’m tempted to buy the physical copy of this book because I know I’ll read it again. So good!

As we’ve transitioned our diet to 80-ish% vegetarian, one thing I’ve noticed is that it’s hard to find dishes without rice or pasta. Don’t get me wrong, I love both, but sometimes I just want something a little less carb heavy.
We had this delicious spicy zucchini and chickpea dish yesterday that was tasty and hearty without a plate full of noodles. I opted for crumbled feta instead of the fontina and parmesan the recipe called for, for no reason other than my love for feta cheese.
Eamon and Bec are two, wonderful, Canadian-based YouTubers that I’ve followed for a while, and we bought their digital cookbook last summer. They maintain a vegan diet, and their buffalo cauliflower taco recipe is our absolute favorite! I opt for a greek yogurt based sauce vs. a vegan mayo base, but we keep everything else true to the recipe. If you’ve been looking for great plant based recipes - definitely consider their cookbook!

I also filmed an empties video before I left, and I’d like to get that edited and uploaded later this week. It feels so nice not to have insanely long work hours again, and I’m excited to ease back into more frequent filming and editing. I hope you all have a great week!
